Sweet Potato, Shallot and Chili Burger
2 decent sized sweet potatoes
I large Chilli
I Egg White
Salt & Pepper
Handful plain flour if required
A little Oil
(Your choice of simple salad)
Bake the Sweet Potatoes for around 40mins, you don't want them 'too soft', then let them cool
Take the skin off on this occasion
Place in a bowl with the finely chopped shallots, turmeric, half the Chilli and add paprika
Pop in the egg
Get your hands in and mix it all up till it's all blended.
Pop in fridge for an hour, if potato is too soft, you'll have to add flour.
After the hour season well, and make two burgers by hand.
Heat a pan up so it's quite hot with rapeseed oil or similar, lower heat a little and place the burgers in carefully turning them so they keep shape but not burning, season some more.
Make sure you're generous with the Chilli
Keep turning them for around 8-10 mins until lovely and orangey golden. Still keeping their shape.
Make your salad up, with a nice dressing.
Plate up, top the burgers with Parmesan and Chillies. Season well.
You can add what you wish really, for more texture in burger.
